A grass-fed yogurt cheese? This combination of course makes this the top-of-the-line as far as cheeses go. This cheese is a bit softer than our other cheeses yet it is still firm. It has a succulent, delicate, smooth, melt-in-your-mouth texture with a distinct tangy, milky flavor. VERY old-world in all of its intricacies. A complete masterpiece in the art of cheese making. Completely in a class of its own. It immediately became my favorite cheese the instant I first tasted it.
